Ingredients:
1/2 pound flour
1 teaspoon salt
1 1/2 ounce lard
1 1/2 teaspoons baking powder
1 1/2 teaspoons sugar
1 tablespoon baking powder
oil for frying
water
Method:
Sift flour, salt and baking powder into a bowl. Rub in the fat until the mixture is crumbly. Add the sugar and mix well. Pour in enough cold water to make into a dough. Turned out and knead lightly on a floured board. Put into container, cover and refrigerate for about 30 minutes. Pinch off pieces of dough the size of a lemon, roll into balls, then flatten into rounds about 1/4-inch in thickness. Heat the oil in a large heavy frying pan, then fry the bakes, a few at a time, until golden brown on both sides.
note
coconut oil can be used instead of margarine or lard.
bakes can also be baked on a hot greased griddle or on a greased baking sheets in the oven. (do not pinch off peices of the dough, but rather flatten the entire dough as above and bake)
