Bar B Que Pigtail

  • Salted pigtails
  • Water (for preparation)
  • 1 Pack Cinnamon Powder
  • 1/2 Tsp Red food colouring
  • 4 Bay leaves

  • Fresh Green seasoning( cilantro, chive, ginger, garlic)
  • 1 Small bottle Bar B Que sauce
  • 1 1/2 Bottles Ketchup
  • All purpose seasoning
  • 4 tablespoons of sugar {optional}

    Method of Preparation - Pigtails:
    Soak pigtails in a generous amount of water overnight Throw away the water soaked in and place pigtails in boiling pot with as much water as can fit. The use of a pressure cooker is optional. Boil pigtails on high heat for approx 1 hr. Drain water, refill and repeat boiling for the same period of time. Drain water, refill and again repeat boiling for the same period of time adding cinnamon and bay leaf and food colouring about 20 mins. before last step. If using pressure cooker make sure and time the cooker and follow those steps up to when the cooker starts to "sing".

    Method of Preparation - Sauce:
    Combine and blend seasonings. Place on fire in pot. Add Bar B Que Sauce and Ketchup. Add all purpose seasoning. Add sugar. Add water to desired consistency. Stir and simmer for about 5-10 minutes. *The sauce can be strictly customised as you can add any flavor eg pepper to you taste.

    Bar B Que process:
    With use of coals under a grill. Firstly place pigtails to get a little colour on both sides. Remove from grill and dip in sauce and return to grill. Grill to your choice of colour.
