Method:
To make fresh coconut milk, crack your coconut and open; remove any liquid inside the coconut. With a strong knife, remove the coconut flesh from the hard covering. The flesh will come away if you
slide a knife between the flesh and the covering. Grate your flesh. Or place it in a blender or food processor. I prefer the blender. Add one cup of hot water. Blend coconut with water. Set a sieve
over a large bowl. Line your sieve with a fine kitchen towel. Pour the blended coconut mixture into the sieve and squeeze out all the coconut milk. Repeat if necessary. One coconut will yield one
cup of coconut milk.
