Ingredients:
1 1/2 cups cornmeal
1 1/2 cups hot water
1 cup cheese
4 tbs melted butter
1 1/2 cups corn niblets
1/2 cup chopped chives
1/4 cup chopped chadon beni
1 tsp salt
oil for frying
Method:
Combine all the ingredients to make a thick batter, heat oil in a skillet and drop by tablespoons.
Using the back of a spoon, flatten cakes. Pan fry for about four minutes per side, until golden brown.
Makes about 12 to 16.
