Corn Cakes



Ingredients:
  • 1 1/2 cups cornmeal
  • 1 1/2 cups hot water
  • 1 cup cheese
  • 4 tbs melted butter
  • 1 1/2 cups corn niblets
  • 1/2 cup chopped chives
  • 1/4 cup chopped chadon beni
  • 1 tsp salt
  • oil for frying

    Method:
    Combine all the ingredients to make a thick batter, heat oil in a skillet and drop by tablespoons. Using the back of a spoon, flatten cakes. Pan fry for about four minutes per side, until golden brown. Makes about 12 to 16.
