• 2 ripe avocados
  • 3 cloves garlic crushed
  • 1/4 cup fresh coriander leaves
  • 1 tablespoon lime juice, (more or less to taste)
  • salt and freshly ground black pepper to taste
  • 1/2 fresh hot pepper, seeded and finely chopped
  • 1/4 cup sour cream or thick yogurt
  • 2 tablespoons freshly chopped chives

    Peel the avocados, and chop finely. In a mixing bowl, combine the garlic, lime juice, sour cream, salt, fresh and ground pepper, and fresh coriander. Stir in the avocado and mix gently. Sprinkle with chives and serve. Serves 8

    note: It can be served as a dip with freshly cut veggies, with corn chips or as a garnish for fajitas.
