Ingredients for pie:
1 pkg, digestive biscuits crushed
4 oz melted butter
Method for pie:
Mix together, press into base and sides of 9" pan. Place in oven at 300 for 5 mins and leave to cool.
Ingredients for cheescake:
12 oz soften cream cheese
1/2 cup sugar
2 eggs separated
1/2 cup pureed mango
8 tbsp boiling water
1 tsp vanilla
1/2 cup sour cream
Method for cheesecake:
Sprinkle gelatin on hot water and leave to dissolve. Beat together sour cream, cream cheese, sugar, mango, vanilla,
egg yolks. Add gelatin. Beat eggs whites until stiff, fold into cream mixture. Pour into pie base. Chill to set.
