Mango Salsa



Ingredients:
  • 2 mangoes, half ripe, preferably Julie mango, finely chopped
  • 1 clove garlic, minced
  • 1 /2 congo pepper, finely chopped and seeded (more or less to taste)
  • 1 tabs fresh lime juice
  • salt and freshly ground pepper to taste
  • 1/4 cup fresh coriander, finely chopped, or chadon beni

    Method:
    Combine mangoes, garlic, pepper, lime juice, salt and pepper. Let stand for one hour before serving. Add the fresh coriander last. Makes about 3 cupsnote: can be serve with grilled steak, fish or chicken
