Mango Upside-Down Cake



ingredients:
  • 2 cups sliced ripe mangoes
  • 1 tbsp. butter
  • 1/2 cup brown sugar
  • 2 tbsp. lime juice
  • 1 sm. pkg. yellow cake mix
  • 1 egg (as directed on cake mix pkg.)

    Method:
    Melt butter in eight inch cake pan; add brown sugar. Add lemon or lime juice to sliced mangoes. Arrange mangoes in pan on brown sugar. Mix yellow cake according to directions and spread evenly over mangoes. Bake at 350 degrees about 40 minutes or until done. Serve hot or cold with whipped cream or topping as desired.
