Peanut Brittle

  • 2 cups sugar
  • 1 pound peanuts (raw)
  • 1 teaspoon water
  • 1 cup light corn syrup
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

    Combine sugar and syrup in 3 quart saucepan. Stir until sugar dissolves. Cook to 300 degrees (Fahrenheit) then add peanuts. Cook until temperature reaches 300 degrees again. Remove from heat, add vanilla, water and soda. Pour into well buttered cookie sheets (2). Spread out evenly with spatula. Cool, then break into small pieces.
