Pepperpot Stew

  • 3 lbs lean stewing beef, visible fat removed and browned in Dutch oven type casserole
  • 3 cups beef broth
  • Salt to taste
  • 1 cup green beans or peas or sliced green pepper
  • 1/2 cup sliced celery
  • 3/4 cup sliced carrots
  • 3/4 cup diced, raw potato
  • 3/4 cup chopped onion (or equivalent amount of instant dried onion)
  • 1/4 to 1/2 tsp. ground black pepper.

    Cook browned meat and broth in Dutch oven or crock pot for 3 to 3 1/2 hours. Add vegetables and pepper; cook until vegetables are tender, 35 minutes or so.
