Ingredients:
1 large ripe pineapple
1/3 cup fresh lime juice
11/2 cups sugar
8 cups filtered water
Method:
Peel, and grate the pineapple, place into a large glass jug or bowl. Add lime juice. Boil sugar with two cups of water. Pour hot syrup onto pineapple.
Add the rest of the water, stir and cover. Let stand for one to two hours. Strain to remove pulp. Refrigerate until ready to use. Makes about ten cups.
