Pineapple Jam

  • 1 large pineapple, 4-5 lbs
  • 2 cups chopped pawpaw
  • 2 cups chopped apples
  • 1/4 tsp each allspice, cloves
  • 1 tsp cinnamon
  • 1 onion, chopped
  • 1 hot pepper
  • 1 cup white vinegar
  • 1 cup brown sugar
  • 1/2 tsp salt
  • 1 lime
  • Granulated sugar

    Peel pineapples and grate or chop in food processor. Place in a large pot and cover with water. Cut lime in half and add to pot. Bring mixture to a boil and cook for five minutes. Remove from heat and measure your mixture. For every cup of pineapple mixture add one cup granulated sugar. Return mixture to pot. Bring to a boil, then simmer for about 20 minutes until mixture is thick. Spoon into sterilised jars. Makes about two 14-oz jars of jam.
