Ponche de Creme
A beverage that is popular during Christmas season.

  • 6 eggs
  • 1 lime peel, coarsely chopped
  • 1 (7 ounce) evaporated milk
  • 1 (10-ounce) can sweetened condensed milk
  • 1/4 cup dark rum (any Trinidad rum)
  • 1 teaspoon Angostura bitters

    Beat the eggs with the lime peel. Remove and discard the peel.In the top half of a double boiler, combine the beaten eggs with the milk, stir well, and heat over boiling water until the mixture is thick and smooth. Remove from heat and cool. Stir in the rum and bitters, bottle and chill. Shake well before serving over cracked ice.
