Sponge Cake

  • 1 lb all purpose flour
  • 1 lb granulated sugar
  • 1 lb margarine
  • 1 dozen eggs
  • 1/4 teaspoon salt
  • 1 heaping teaspoon baking powder
  • 2 teaspoons vanilla essence
  • 2 tablespoons condensed milk

    Sift flour,salt and baking powder together and set aside. Cream butter and sugar until light and fluffy, add eggs one at a time to mixture, beating in between. When all eggs are used up continue beating by hand for 10 seconds. Add flour, a little at a time, again beating between additions. Add condensed milk and essence. Continue to beat by hand until mixture is smooth (approx 200 strokes). Pour into already greased and floured cake tins and bake at 450 degrees for 1 hour or until cake springs back up when touched with finger.
