Ingredients:
2 lbs flour
2 cups grated coconut
1 1/2 cups sugar
1/2 lb. margarine
3 tablespoons baking powder
1 teaspoon yeast
1 teaspoon mixed spice
1 ground nutmeg
mixed peel - 1/2-1 cup
raisins - 1/2-1 cup
currants - 1/2-1 cup
Method: Mix together the flour, coconut, sugar and baking powder. Add margarine, spices and dried fruit. Dissolve yeast in a small amount of water and add to mixture. Knead the dough so that it is soft (adding more water if required) and let stand for 1 hour. Cut into three loaves, place in greased pans, let stand for another 30-60 minutes and bake at 350 F until done.
